The GOOD – We Love Kale Chips
These are my latest obsession. They’re the perfect alternative to chips, and they’re a superfood! There are a lot of good recipes for kale chips out there, but I’ve found these are my favorite.
Any kale will taste great, but my favorite to use is curly kale (pictured below). Curly kale will give you the most chip-like shape and consistency- the curlier the better! Purple (or Serbian) kale is also fun to use because kids love the color!
You’ll need:
1-2 heads of kale (the kale bakes down significantly)
3-6 cloves of garlic
olive oil
salt and pepper
baking sheet
Preheat oven to 350 degrees.
First take the kale and cut along each side of the stem. You only want the leafy part for your chips. After removing the stem, rip your kale into chip-size pieces.
Mince your garlic. Toss kale very lightly in olive oil and minced garlic (about 1-2 TBSP of oil per head of kale). Make sure the kale is not saturated with oil, or you won’t get the crispiness of the chip. Spread the kale out evenly on the cookie sheet. Season lightly with salt and pepper.
Bake at 350 for 13-15 minutes. Kale chips should be green and not brown. If your chips start to turn brown remove them from the oven (they’re still good, just slightly more bitter).
Tip: You can also shred some Parmesan cheese over them when they’re out of the oven to give them a little extra YUM!
WARNING!!! The kids will NOT leave any for you, so make sure you have your own stash 😉
